Hash Brown Potato Cakes

Hash Brown Potato Cakes

4 medium potatoes, washed and shredded
2 Tbsp chopped onions
1 egg
1/2 c. crushed saltine crackers
1 tsp. salt
1/2 tsp. pepper
1 Tbsp. canola oil
cojack cheese

Shredd potatoes and soak in water for 2-3 hours in the frig.(You can let the poatoes sit all day if you want to as long as they are in the frig.) When ready to cook, drain water from potatoes and dry with a paper towel. Mix potatoes, onions, egg, crackers, salt and pepper together. Heat up a skillet or griddle. Add canola oil and let it get hot. Use 1 cup of potato mixture and shape into a thick patty. Let it cook until it's brown on the bottom and then turn over, letting the other side brown up. Last few minutes add cojack cheese on top of patty and let it melt.

Makes 6-7 patties

they are also delicious leftover and warmed in the microwave.
